TEXAS ROADHOUSE ROLLS!!!

I don't know about you, but we only go to Texas Roadhouse for the rolls.

And the ribs!

Mmmm... I'm hungry now!

I have searched everywhere for a decent recipe to match the tastiness of TR's rolls. It can't be exact since TR actually uses a "roll mix" to prepare their rolls.

I have found multiple recipes and tried a few.

This is the closest I can find, light and fluffy... check.

But do not get me wrong, they do not taste exactly the same.

Enjoy.

Texas Roadhouse Dinner Rolls

2 tsp. active dry yeast
1/4 c. warm water
1 c. milk, scalded and cooled to lukewarm
1 1/2 Tbl. of melted butter, slightly cooled
1/4 c. sugar
1 quart all purpose flour (3-4 cups)
 1 whole egg
 1 tsp. salt

Dissolve yeast in warm water with a teaspoon of sugar; let stand until frothy. Combine yeast mixture, milk, 1/4 cup sugar and enough flour to make a medium batter (about the consistency of pancake batter).  Beat thoroughly.  Add melted butter, eggs and salt.  Beat well.  Add enough flour to form a soft dough.  Sprinkle a small amount of flour onto counter and let dough rest.  Meanwhile, grease a large bowl.  Knead dough until smooth and satiny and put in greased bowl; turn over to grease top. (I used the dough hook on my Kitchen-Aid to knead this for about 4-5 minutes).  Cover and let rise in a warm place until double in bulk.  Punch down.  Turn out onto a floured board.  Divide into portions for shaping; let rest 10 minutes.  Shape dough into desired forms.  Place on greased baking sheets.  Let rise until doubled.

I shaped my rolls by rolling out the dough into a rectangle, about 1-inch thick. I then used a dough scraper and cut the rolls into squares and placed those on my greased baking sheet. Bake at 350 for 16-17 minutes.
If you want the real thing, TR does sell the dough ready to cook for $4 a dozen.
